This refreshing green juice is a regular in our house – we have some variation of it a couple of times each week. It really is nice.

Crisp cucumber, hydrating celery, and sweet apples make the base light and easy to drink, while kale adds a serving of calcium-rich greens. Lemon brings a sharp, clean brightness, and ginger gives it just the right amount of kick.

The ingredients for this aren’t set in stone – feel free to swap apples for pears, lemon for limes, kale for spinach. It’s about getting lots of raw vegetables into your system – the exact quantities don’t matter so much.

It’s nutrient-packed, naturally energising, and makes a great light meal. We sometimes use a double serving of this as a meal replacement, or have a small glass of it alongside our Super Grain Porridge.

1 lemon, peeled.

Ginger Root

Ginger Root

Peeled.

Method

Make All the Greens Juice

  1. Wash all of the ingredients.
  2. Peel the lemon and ginger.
  3. Chop into pieces suitable for your juicer.
  4. Feed everything through a slow (masticating) juicer – it handles leaves like kale much better than a centrifugal one.
  5. Stir, and serve over ice. Drink fresh or refrigerate and shake well before serving later.
