Method
Make the Strawberry Mousse
- Add the strawberries, cashews, vanilla powder, coconut oil, dates and silken tofu to a high powered blender.
- Blend on high until completely smooth and creamy, stopping to scrape down the sides if needed.
- Pour into 6 small ramekins.
- Chill in the fridge for a couple of hours.
- These will keep forgetting 3 to 4 days.
Phe's notes
This is a lovely little dessert option when you want something sweet, creamy and fruity without making anything complicated.
Depending on how sweet you like things, you can omit the dates, which will reduce the carbohydrate and sugar.
The mousse works really well with defrosted chopped strawberries. We use the organic brand Pack’d. If you’re using frozen strawberries, leave them to defrost at room temperature for a couple of hours before you start.
The mousse is best after a few hours in the fridge.
