Courgette Stir Fry
A colourful tofu and tempeh stir fry packed with veg, tamari and five spice.

Method
Make the Courgette Stir Fry
- Chop all of the vegetables before you start cooking.
- Set a large pan or wok over a medium-high heat.
- Add the onion, garlic and ginger and cook for a few minutes, stirring often. Add a splash of water if anything starts to stick.
- Add the vegetables, starting with the firmest first, then work through the softer vegetables. Stir fry until everything is nearly cooked but still has a bit of bite.
- Add the peas, chopped tofu, tempeh, tamari, sesame oil, Chinese five spice, salt and pepper.
- Stir everything through until hot and evenly coated.
- Taste and adjust the seasoning before serving.
Phe's notes
You can vary your ingredients here. Peas could swap for another bean or legume. Chickpeas work really well in stir fries, so that would be a good swap. You could use all tofu or all tempeh, you don’t necessarily need a mixture. Most veg can be swapped for whatever you have on hand, just be cautious of swapping green/leafy veg for starchy veg as that will change the nutritional profile considerably.
I have a stir fry a couple of times each week and use this as a guide but no two are ever the same. We eat seasonally, and to whatever needs using up.
