Method

Make the Courgette Stir Fry

  1. Chop all of the vegetables before you start cooking.
  2. Set a large pan or wok over a medium-high heat.
  3. Add the onion, garlic and ginger and cook for a few minutes, stirring often. Add a splash of water if anything starts to stick.
  4. Add the vegetables, starting with the firmest first, then work through the softer vegetables. Stir fry until everything is nearly cooked but still has a bit of bite.
  5. Add the peas, chopped tofu, tempeh, tamari, sesame oil, Chinese five spice, salt and pepper.
  6. Stir everything through until hot and evenly coated.
  7. Taste and adjust the seasoning before serving.
