High Protein Vegan Chia Pudding
Delicious and filling, this makes a great breakfast! You'll need to make it the night before (at least 3 hours before) so that it can set properly.

Method
Make the Berry Blend
- Add the yogurt, protein powder, vanilla and strawberries to your blender, and blend until smooth.
- Scrape out into a jug of some sort, as you’ll need to be able to mix everything together (and it does take some mixing).
- Add the frozen blueberries and mix through.
Make the Chia Pudding
- Put a kettle on to boil. Whilst it’s boiling, add the chia seeds to a bowl or jug.
- Once the kettle has boiled, add the water, and stir well to combine. The heat helps the chia seeds to swell quickly.
- Let it sit for a minute or two, then stir well again. Then, mix it into the berry blend, and stir well until everything is mixed through. Tip into a jar, and place in the fridge for at least three hours.
Eat whenever you’re ready.
Phe's notes
Use any good quality protein powder here. Unsweetened is best, as otherwise, the chia pudding is likely to come out overly sweet. I make it with a blend of rice, pea, hemp and fava bean protein powder, but I appreciate most people don’t have that to hand!
You’ll need to make it the night before so that it can set properly.
This travels well in a thermos type container.
If you’re not plant-based, you could use dairy yogurt and your favourite protein powder.
