Breakfast Scramble
A high-protein breakfast scramble with veg, tofu, vegan sausages and plenty of flavour.

Method
Cook the Sausages
- Cook the vegan sausages according to the packet instructions. If you’re using the Linda McCartney sausages, they could need a bit longer.
- Once cooked, set aside.
Make the Scramble
- Peel and dice the sweet potato into small pieces so it cooks quickly.
- Chop the onion, mushrooms and cherry tomatoes.
- Add the onion, garlic and sweet potato to a pan over a medium heat and cook until the sweet potato is almost tender. Add a splash of water if anything starts to stick.
- Add the mushrooms and cook until softened.
- Add the tofu scramble, spinach, tomatoes, oregano, salt and pepper.
- Cook until the spinach has wilted and everything is hot through.
- Serve with the sausages.
Phe's notes
This is a really filling savoury breakfast. You can vary the veg, add some courgette, throw some peppers in – really it’s whatever works for you.
We make the scrambled tofu from scratch, but you can also buy it pre-made.
If you are having it with vegan sausages, pick them carefully. They can be incredibly high in fat or full of all sorts of mystery ingredients. We use the pea-based sausages from Linda McCartney as they’re the cleanest vegan sausages we’ve found.
