Cook the Sausages

  1. Cook the vegan sausages according to the packet instructions. If you’re using the Linda McCartney sausages, they could need a bit longer.
  2. Once cooked, set aside.

Make the Scramble

  1. Peel and dice the sweet potato into small pieces so it cooks quickly.
  2. Chop the onion, mushrooms and cherry tomatoes.
  3. Add the onion, garlic and sweet potato to a pan over a medium heat and cook until the sweet potato is almost tender. Add a splash of water if anything starts to stick.
  4. Add the mushrooms and cook until softened.
  5. Add the tofu scramble, spinach, tomatoes, oregano, salt and pepper.
  6. Cook until the spinach has wilted and everything is hot through.
  7. Serve with the sausages.
