Make the Plant-Based Bolognese
- Finely chop the carrot, pepper, tomatoes and mushrooms. Mince the garlic.
- Add the mince to a large frying pan and cook over a medium heat until browned. If it starts to stick, add a splash of water to loosen it. Remove the mince from the pan.
- Add the onion and garlic to the pan and cook for 5–10 minutes until the onion is translucent. Add the carrot, pepper and tomatoes, and cook for a further 5-10 minutes, until the carrot is al dente. Add the mushrooms and cook for another 5 minutes.
- Add the remaining ingredients to the pan (except the mince), stir well and cook for 5 minutes to warm everything through.
- Return the mince to the pan, stir well and cook for another 5 minutes until the mince is piping hot throughout.
Phe's notes
This plant-based bolognese is all about the sauce — rich and packed with plenty of veg to give it a great flavour and texture. It works brilliantly with vegan mince, vegan meatballs, or just loads of green lentils if you prefer something a bit more whole-food based.
It’s also incredibly flexible when it comes to what you serve it with. My favourite is to use runner beans or courgettes as noodles.
If you’re after a simple, wholesome dinner that feels a bit “classic comfort food” but still ticks the nutrition boxes, this one’s a really good shout.
