Method
Make the Chocolate Chia Pudding
- Add the plant milk, cacao powder and maple syrup to a bowl or jug.
- Mix really well until smooth. We use an electric whisk for this.
- Stir in the chia seeds and cacao nibs.
- Leave to thicken, stirring every 10 minutes for at least 30 minutes.
- Eat once thickened, or chill in the fridge for later.
Phe's notes
This is a small but satisfying chocolate pudding that works really well when you REALLY need a little something chocolatey. The cacao nibs add a nice crunch too!
Chia seeds bring fibre and omega-3 fats, while the cacao adds a deep rich chocolate flavour.
I make this with Sproud milk as it’s zero carbohydrate and has some protein – which is rare for non-soya milk.
